An evening of cider-tasting and pizza-making at The Stable, Cardiff

Cardiff city centre certainly isn’t short of decent pizza restaurants, from well-loved chains like Locke and Remedy,  Base and Barley, Pizza Express and Zizzi, to independent Italian restaurants like Cafe Citta, Giovanni’s and Toni’s Amici offering wood-smoked, stone-baked pizzas laden with delectable toppings.

I first reviewed The Stable back in January of this year, following its launch in December 2015. You can read more about the restaurant background in my original review of The Stable). For me, what sets The Stable apart from other pizza places in Cardiff is its focus on cider, gourmet pies, and creative pizza toppings drawing upon locally-sourced, quality ingredients.

Earlier this month, I returned to The Stable for an evening of cider-tasting and pizza-making with some fellow bloggers including Explore With Ed, Miss Nicklin, The Plate Licked Clean and Side Street Style.

Cider-tasting

The evening began with a cider-tasting session hosted by the Purbeck Cider Company, Dorset. I particularly enjoyed sipping on the Dorset Draught; a dry cider made using 6-8 varieties of bittersweet apple which tasted almost like an apple-infused prosecco. However, my favourite cider from the Purbeck’s range was the Cheeky Cherry pink cider which had a sweet, almond-like taste reminiscent of Bakewell tart.

We also tried some ciders from Caerphilly-based Williams Brothers Cider, including a dry cider named Growler that is made using several different apples, such as the Dabinett, in addition to a sharper variety known as Browns.

Pizza-making

Following the cider-tasting session, we were invited to make our way to The Stable’s kitchen to have a go at making any pizza that took our fancy from the menu, pictured below.

Having fallen in love with The Severn Heavens (£12) when I tasted it at The Stable’s launch, it was easy to decide which pizza I wanted to make. Meanwhile my friend, Sarah, couldn’t resist the sound of The Wooly Welshman (£11.50).

The Severn Heavens is topped with Jackson’s of Newton Abbot smoked mackerel, Severn and Wye smoked salmon, English spinach, fresh tomato sauce, mozzarella, parsley and lemon, while The Wooly Welshman boasts a delicious mix of  marinated lamb, mint, Y Cwt Caws goats’ cheese, feta, thyme-roasted sweet potato, roasted onions, tomato sauce and mozzarella.

While we were in the kitchen making our pizzas, I was really impressed by the amount of information on display regarding how to prepare food ordered by a guest with an allergy or a special dietary need. All of the pizzas on The Stable’s menu are available as gluten-free, for example and the guidance provided clear, step-by-step instructions for staff on how to prepare a gluten-free pizza.

Just looking at the finished result was enough to make my mouth water; we could barely hold ourselves back from tucking in for long enough to take these photos! The pizza bases were firm and crispy on the outside, yet soft and doughy on the inside. The salmon and mackerel complemented each other beautifully, while the parsley and lemon added taste and prevented the pizza from tasting too ‘smoky’.

The Wooly Welshman was just as fascinating to look at and even better to taste. The classic combination of tender lamb and fresh mint was delicious, while the addition of thyme-roasted sweet potatoes and roast onions injected unique flavour into this otherwise traditional concoction of ingredients.

To round off our meal, we shared the ‘Nutella Pizza Pudding’; a pizza base drizzled in Nutella and topped with several dollops of mascarpone cheese, which I initially mistook to be melted white chocolate. This was a simple, yet satisifying dessert to end the evening with and it wasn’t overly sweet, although I definitely couldn’t eat a whole one to myself after eating a pizza beforehand too.

My second visit to The Stable has impressed me even more than the first time. I love the variety of toppings on offer, and I’m looking forward to working my way through all of the pizzas on the menu to see which one I like best – not to mention tucking into one of those hearty pies – all washed down with a glass of cider, of course!

      Yes, it was tasty and quite unique really with the mascarpone on it, although I couldn’t have eaten a whole one to myself after polishing off a pizza!

    I would absolutely love to make my own pizza that I can eat. I mean, yeah you can make it at home, but it is not the same.
    My kids would absolutely love something like this too!

    Ooh Nutella pizza sounds a real treat! I had the pleasure of taste testing some of Purbeck’s ciders earlier in the year and found them very drinkable!

      I really loved Purbeck’s Cider! Especially the cherry cider – could have drank that all night 🙂

    Oh my gosh! These all look so amazing! I would love to try them all. My daughter had a pizza recently that was Mozzarella, Bacon and Sweet potato mash!
