Nutella and Baileys Brownies Recipe

What will your family be eating for dessert after your Christmas dinner? Forget traditional Christmas pudding, fruit cake, sherry trifle or even chocolate yule log, the only dessert you need on your Christmas dinner menu this year is my Nutella and Baileys brownies.

Think about it. You’ve just polished off your Christmas dinner, you’re feeling fatter than the Christmas turkey and despite desperately trying to keep your eyelids open long enough to pull yet another cracker with your nan, all you really want to do is curl up on the sofa and fall asleep to crappy Christmas TV.

The last thing you really want to be doing is tucking into a heavy, brandy-soaked Christmas pudding or a sickly chocolate yule log laden in rich buttercream icing.

Instead, keep it light with a Nutella and Baileys brownie served with a scoop of luxury vanilla ice cream on the side – and a glass of Baileys to wash it all down, of course. If you’re feeling particularly full, you could even cut the brownies in half and serve them as miniature desserts or petit fours.

My Nutella and Baileys brownies are adapted from a similar recipe originally published by Good Housekeeping. The original recipe calls for Baileys Irish Cream Liqueur, but having experimented with both varieties myself at home, I think Baileys Chocolate Luxe Cream liqueur adds a touch of decadence. These indulgent brownies are ideal for festive dining or snacking, although they’d be just as enjoyable at any time of the year.

These brownies can be kept in an airtight container for around 4-6 days and while I haven’t attempted freezing them yet, I am tempted to give it a go in the unlikely event that I happen to have any leftover!

Nutella and Baileys Brownies

If you're looking for a quick and easy recipe for a dinner party, look no further than these Nutella and Baileys brownies. 

Your guests will marvel at the marbled effect on top, not realising that it actually took you less than an hour to prepare, bake and dish up these beautiful brownies. It's amazing what you can do with some cream cheese and a chopstick.

This indulgent recipe is ideal for the festive season, although these brownies are bound to go down a treat at any time of year!

For the brownie mix

  • 250 g Nutella
  • 125 g light brown sugar
  • 3 large eggs
  • 50 ml Baileys Chocolat Luxe Cream Liqueur
  • 1 tsp vanilla essence
  • 50 g organic cacao powder
  • 150 g unsalted butter melted
  • 75 g plain flour

For the creamy swirl

  • 100 g cream cheese full-fat
  • 25 g caster sugar
  • 1 egg yolk
  • 50 ml Baileys Chocolat Luxe Cream Liqueur
  • 25 g plain flour


  1. Preheat oven to 180°c and lightly grease and line a 20.5cm (8in) square tin with parchment paper. If you don’t have a square tin, a rectangular tin will do at a push.

  2. Combine the Nutella with the brown sugar, Baileys, vanilla extract and eggs. You may find it easier to use an electric hand whisk, but a regular whisk is fine if you don’t have one to hand - it’ll just take longer to mix all the ingredients together.

  3. Gradually add the cacao powder, melted butter and flour, stirring thoroughly until fully combined. 

  4. Set aside the brownie mix and in another bowl, mix the ingredients for the swirl together until smooth.

  5. Transfer the brownie mix into the prepared tin, using a spatula to ensure it’s evenly spread out.

  6. Spoon the creamy mixture onto the brownie mix, then use a skewer or chopstick to mix it into the brownie mix, creating a marbled effect.  

  7. Bake for around 25-35 minutes or until the brownie mix has set and the surface is dry and smooth, as opposed to moist and sticky. Leave to cool in the tin, then transfer to a chopping board and slice into 12-16 squares, dependent on desired size.

    Those brownies look so arty! And am sure they taste amazing. I usually feel stuffed like the turkey after Christmas lunch so these are a great idea! Love nutella, which actually comes from Alba here in Northern Italy!
