Mozzarella, bacon and roasted veg salad

Recently, Florette Salad challenged me to post a recipe on my blog using any one of their products.

The obvious option was a salad, but I wasn’t sure what I was going to make at first; I’ve eaten so many salads lately, it had to be something a little bit different that wasn’t going to taste like rabbit food.

When I came across this recipe for mozzarella, bacon and roasted veg salad on Florette Salad’s website, I knew it was the one. There were a few good contenders on the website, which features a range of low calorie meals besides salads, but I liked this particular recipe because I’ve never heard of bacon and mozzarella being used together in a salad before and it allows you to enjoy a bit of the good (salad, roasted veg) with a bit of the bad (bacon, mozzarella).

The bacon and mozzarella went well together and, along with the roasted veg, made for a salad that looked really appealing and tasted even better. I’ll definitely be making this again!

Duo salad (I couldn’t find this so used ‘Sweet and crispy’ instead)
Red Pepper
Red Onions
Buffalo Mozzarella (ideally in small balls, but you can just chop up a larger ball like I did)
Bacon Lardons (I just chopped up a few slices of bacon)
Virgin Olive Oil
Balsamic Vinegar
Salt
Pepper

Method

1. Heat oven to 200 degrees.

2. Cut red pepper in half and discard all seeds. Skin the red onion and cut into eight pieces.

3. Put pepper and onions in a non stick roasting pan, drizzle with olive oil and roast for 15 minutes (I added some fresh thyme, which made for a delicious taste after roasting!)

4. Remove the pepper when the skin is starting to blacken, leaving the onions in for a further 10 minutes.

5. When cool, peel the skin off the pepper and cut in to long thin slices (this is a really messy job, but it’s worth it!)

4. Gently saute the sliced lardon pieces in a teaspoon of olive oil until golden brown.

5. Put Duo salad leaves in a bowl. Lay over the top the pepper slices and roasted onion. Pour over a slug of olive oil, some balsamic vinegar, and seasoning. Sprinkle over the Mozzarella balls and the hot lardons and serve.

  1. That salad looks lovely. I like it when it’s not all rabbit food. I enjoy adding apple to salads to give it added sweetness.

  2. Oh sounds like a good recipe – would never think of putting bacon and mozzarella together but I bet it’s gorgeous x

  3. I’ve never thought of roasting vegetables and using them in a salad- but it would definitely make me eat more salad, I’m not a fan of the usual bland cold salad but this sounds right up my street!

  4. Oh my word, I can’t believe how delicious that looks! I wouldn’t have thought of combining roast veg with bacon to make a salad at all. Drooling now….

  5. My husband always makes a fuss when we have salad for lunch but as both bacon and mozzarella are favourite foods I might just get away with this one.

  6. Roasting vegetables in a salad is the best although as a veggie I would substitute the bacon for Quorn chicken.

  7. mmm this sounds yum! My husband is a huge fan of anything with bacon in so I’m sure I could sneak this salad past him!
